Peanut Butter XOXOs, adapted from Betty Crocker’s Peanut Butter Cookie Recipe
Cookies
1/4 cup granulated sugar
3/4 cup packed brown sugar
~1/2 cup peanut butter
1/2 cup butter, softened at room temp
1 egg
1/2 teaspoon high quality vanilla extract
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
~1/2 teaspoon sea salt
Decorations
~1/2 cup granulated sugar
~1 teaspoon white decorating sugar
~26 chocolate drops
Using a handmixer, cream both sugars, peanut butter, butter, egg, and vanilla extract in large bowl until light and fluffy.
In a separate bowl, combine remaining dry ingredients and mix well. Gently stir the flour mixture into the butter mixture by hand, careful to not overmix. Cover and refrigerate about 1 hour or until firm.
Preheat oven to 375°F.
In a side bowl, combine the 1/2 cup granulated sugar with about 1 teaspoon of white decorating sugar.
Shape dough into about 1 teaspoon-size balls and roll each ball in the sugar mixture. Place about 3 inches apart on ungreased cookie sheet. Using a mason jar or glass, flatten the balls slightly to ensure they bake evenly and keep their circular shape.
Bake 9 to 10 minutes or until light golden brown and crackly. Cool about 2 minutes and press the chocolate drops into the center of each cookie. Remove from cookie sheet and cool fully on wire rack. Enjoy!
