Jammy Egg Rice Bowl

When you just get back from a long shift at work, the last thing you probably want to do is cook; this recipe is designed for super fast preparation, especially if you’ve got cooking fatigue from cooking at work. Batch cook some rice at the beginning of the week, and you’re good to go! I recently lived off of this recipe while fighting the flu, and it was phenomenal, especially with extra hot sauce.

1 cup cooked rice

2 eggs

1 TBSP butter (I love Kerrygold’s salted Irish butter - it is SO flavorful)

1 cup greens (raw spinach, kale, or herby salad mix)

1/2 cup grated carrot

Juice of half a lime

Sauces to taste:

Soy sauce

Hoisin sauce

Hot sauce of choice, optional (I’m a huge proponent for Trader Joe’s Yuzu Hot Sauce, but Sriracha works just fine too!)

Optional garnishes:

Toasted sesame seeds

Nutritional yeast

Fresh cilantro

  1. Fill a small sauce pan with water and whole, uncracked eggs. Place pan over high heat and bring to a gentle boil. Once a boil is reached, reduce heat to medium-low and boil for six minutes - this will give you a beautiful jammy yolky egg without it being runny.

  2. While eggs are cooking, warm the rice in the microwave. Stir in butter (because why not?), and top with greens and carrot. Feel free to add other veg as you see fit!

  3. When your timer for six minutes goes off - yes, use a timer! - immediately pull the pan from the heat, gently drain the hot water, and continuously run cold water over the eggs until they are cool enough to handle. Gently peel the eggs and halve.

  4. Assemble your bowl by placing the eggs over the greens, squeeze the lime juice, and sprinkle your sauces and garnishes of choice over the top. And dig in! Breakfast, lunch, or dinner - done in ten minutes or less. BOOM.
