Simplici-tea by Christy
2 cups filtered water
1/2 teaspoon ginger paste (from a tube) or a 1/4 teaspoon freshly grated ginger
1 tablespoon honey, agave, maple, or sugar
4 strips lemon peel
1/8 teaspoon cinnamon
In a small saucepan, heat water over medium heat. Add ginger, honey, and cinnamon. Stir well and continue to heat.
Using a vegetable peeler, remove four strips of peel from a lemon. With the pith (white) side up, quickly squeeze the peel lengthwise over the pot of water and spices to release the essential oils. Using the lemon peel, stir the tea gently before dropping the peel in the pot. Continue with the other three strips of peel.
Once the water is steaming, turn down the heat to low and allow to steep for about five minutes. Get work done in the meantime =)
Remove the pot from heat and strain twice through a fine mesh strainer, first into a heat-proof measuring cup, then into a warm mug. Enjoy, and focus!
